Cuppies
Notice that some of the cupcakes have gone missing...obviously someone cant resist the cute cuppies and eat them before the birthday girl blows the candle....:-)
KEK COKLAT MOIST
1 ketul butter
2 cawan gula
2 cawan tepung }
1 sudu teh baking powder } Campur dan gaul sekali
1/2 sudu teh soda bikarbonat }
6 biji telur
1 sudu teh esen vanilla
1/2 cawan gula }
1 cawan koko } Masak atas api kecil, kacau sampai gula hancur.
1 cawan air } Tutup api, biarkan.
Pukul butter dan gula hingga kembang, then masuk telur dan esen pukul sebati. Lepas tu masukkan bahan kering berselang seli dengan bahan koko yg dimasak tadi. Buat selang seli sampai habis dan kacau sebati. Sediakan muffin case, letak dalam muffin pan and tuang adunan ke dalam acuan muffin case dan bakar selama 15-20 minit 170 degrees Celcius.

ICING
300-400g butter - room temp
100g shortening
6-8cups icing sugar (or more ..:-))
4-6 tbs heavy/double cream (1-3tbs more for thinner icing)
2 tsp lemon emulco
colors (i used wilton's)
Beat butter and shortening until fluffy. Add icing sugar little by little. Adjust to your liking. Lastly add emulco. Add color. If you want to use this buttercream for flowers ie rose, then you definitely need a stiffer icing..means more icing sugar, i should warn you, it's going to be very sweet. So what i normally do, make 2 batches of buttercream; 1-thin consistency, 2-stiff.
CHOCOLATE GANACHE
250g Black&Green Plain Chocolate (or any good brand u can find)-70% cocoa
100-150ml double cream or
100ml evaporated milk
50g butter
In a small pan, low heat, heat the cream and butter.Bring to just a boil. Take the pan off the heat and put the chocolate in. Stir until smooth. You can add or reduce cream depending on how thick or runny you want to ganache to be. If it's too runny..you can put it in the fridge for a while to thicken it a bit... Actually there are quite a few ways to make a ganache. You can also double boiler it, or simply microwave it.
I also used fondant to make the 'extras' like flowers, hearts etc. I bought the ready made fondant from the local supermarket. If you need ideas on how to decorate a cupcake, youtube is a good practical easy way to learn some tips...or just use your creativity..
