Banana Cream Cheese Cake with Blueberry
This cake is very soft and moist. It doesnt taste like it has cheese in it...but if you are healthy conscious and dont like cream cheese, you can substitute it with natural yoghurt or sour cream or even buttermilk, but do add 1-2 tsp cornflour to add the 'heaviness' of the cream cheese. Just try and see what happen. I love playing around with the recipes and usually, you will be surprised how nice the cake turn out to be, or errr...the other way around. But, that's how we learn, isnt it..?
Recipe
300g (or less) full fat Philly Cream Cheese-room temp
200g unsalted butter-room temp
270g caster sugar
270g plain flour
5 eggs
1 tsp baking powder
2 del monte riped banana-mashed
blueberries - as much as you like
almond flakes - as much as you like
1.Beat butter at the lowest speed for 1 min.
2.Add cream cheese, caster sugar to creamed butter.
3.Beat the mixture until smooth and blend well.
4.Add egg one at a time.Beat slowly after each addition.
5.Continue beating the mixture slowly until everything is well mixed.
6.Add mashed banana.Fold gently.Add blueberries.
7.Sift flour with baking powder.
8.Fold the flour into the mixture. Sprinkle almond flakes on the cake batter.
9.Bake in 8" pan at 180 degrees C. for 40-50 min.(The amount of baking time will depends on the type of oven that you use. Check you cake regularly after 30th minute.
p.s: For chocolate lover, you can add chocolate chips in it as well..:-)
